Brown Rice and Quinoa Crackers

These crackers are gluten free, dairy free, sugar free, fat free, yeast free and made from presoaked and cooked whole grains. I love Mary's Gone Crackers and Japanese Brown Rice Crackers but want to have a go at making them with soaked grains.

I made these for my son, they have a nice nutty sesame flavor, severe crunch, best of all he loves them. They are a bit tricky to make but worth the effort. I've include a few photos to help those up for the challenge. Enjoy...

Nick's Brown Rice and Quinoa Crackers

150gm Raw Organic Brown Rice
50gm Raw Orgainic Quinoa
1 tspn Celtic Salt
1 tspn Tamari
2 tablespoons Flaxseed
2 tablespoons Sesame Seed

Soak rice and quinoa separately overnight. Cook rice until just cooked, drain. Cook quinoa until just cooked, drain. Cool grains and remove excess moisture (as dry as possible). Thermomix (my food processor) on Speed 8 for 30 seconds, scrape down and Speed 8 for another 30 seconds. Add Tamari, Salt and Seeds and Thermomix on dough setting to knead for 5 minutes (or hand knead until pliable). Wrap keaded dough in cling film or damp tea towel and rest for about an hour. Roll out between sheets of baking paper to about 1 to 2mm thick. Cut out shapes or if too sticky leave on baking paper as is. If lifting shapes, dip your fingers in a teaspoon of oil floated in water to stop your fingers sticking to the dough. Bake at 150C for 30 minutes or until they snap.

Notes:
This dough also makes excellent crunchy grissini (see photo below).
Dough benefits greatly from resting (about an hour). It can also be stored for a few days in the fridge and dough can be frozen.

Soaking, Sprouting and Fermenting - Grains contain phytic acid in the outer husk which blocks nutrient absorption, soaking or fermenting grains breaks down and neutralizes phytic acid. I haven't presoaked the flaxseed/seasame seed when making these crackers. Flaxseed is low in phytic, Sesame Seeds are very high but there are only two tbspns in recipe. The idea is not to eliminate Phytic Acid but reduce it (as we do need some).
